Com forte influencia da deliciosa culinária peruana, mas traços da atual cozinha contemporânea formando uma deliciosa Fusion Food e não uma “Confusion Food” como muitos metidos a moderninhos hoje infelizmente tem feito.
Sob a batuta do competentíssimo Chef Gastón Acurio o restaurante tem opções do mais perfeito ceviche com o maravilhoso Leche de Tigre, molho típico peruano, que leva Ají, suco de limão e outras coisas mais. Ceviche preparado co diversos peixes e frutos do mar, como inesquecível Ceviche de enrizos, Ceviche de ouriços com um molho que leva a pimenta Rocoto.
O cardápio traz também massas maravilhosas, como o spagheti com centolla como não poderia ser diferente estando em Santiago.
Muitas opções de peixes como Congrio, Robalo, Turbot, Atum e Salmão de Puerto Montt, todos muito bem guarnecidos, tão bem guarnecidos que por vezes esquecemos-nos do peixe.
As carnes e aves também são uma atração imperdível como Aji de Gallina, tradicional prato de Lima feito à perfeição, porquinho de três semanas, um delicioso leitãozinho de leite que derrete na boca e o inesquecível Cordeirinho da Patagônia.
Para a sobremesa não deixe de provar as preparadas com lúcuma, uma frutinha do Chile deliciosa.
